Cowboy Caviar
- 1 bunch Green Onions
- 13 cups Cilantro
- 1 can Corn, 14 Oz
- 1 can Black Eyed Peas, 14 Oz
- 1 can Kidney Beans, 14 Oz
- 1 can Great Northern Beans, 14 Oz
- 1 can Garbanzo Beans, 14 Oz
- 1 can Diced Tomatoes, 14 Oz
- 2 whole Limes
- 1/2 teaspoons Garlic Salt
- 1 teaspoon Chili Powder
- 1/2 teaspoons Cumin
- Chop the green onions and the cilantro.
- Mix first 8 ingredients together.
- In a separate bowl, squeeze the juice from the two limes and combine with the garlic salt, chili powder, and cumin.
- Stir until the dressing is combined.
- Pour dressing over the bean mixture, refrigerate overnight for the best flavor.
- Serve with corn chips, crackers or just a spoon!
- Sometimes I improvise with this recipe and use whatever beans I have in the pantry.
- You can also increase some quantities and omit others depending on your taste.
