Mediterranean Tuna Salad Recipe
- 2 (6 1/2 ounce.) cans tuna or possibly salmon in water; liquid removed
- 1/4 pound dill Harvarti cheese, cut into 1/2 inch cubes
- 1/4 c. pitted black olives, sliced
- 2 (8 ounce.) pkg. tri-colored vegetable fusilli, cooked according to pkg. directions
- 1 bunch scallions, thinly sliced
- 1 sm. sweet red pepper, finely minced
- 1 sm. green pepper, finely minced
- Mix the ingredients for the dressing and set it aside.
- Combine the salad ingredients in a large bowl.
- Gradually add in sufficient dressing to coat the mix adequately.
- Toss gently and serve.
- Serves 4-6.
