Melsmom's Sofrito
- 1 bunch cilantro
- 2 medium green peppers
- 2 medium red peppers
- 4 medium Spanish onions
- 3 heads garlic, peeled
- Rinse cilantro.
- Roughly chop the green peppers, red peppers and Spanish onions.
- In your food processor or blender, mince all your ingredients in batches.
- Mix the sofrito.
- You can store in glass jars in your refrigerator or freeze it in ice cube trays.
- When the sofrito is frozen, transfer it to ziploc freezer bags.
- Use a tablespoon at a time or to taste in sauces, meats, beans and more to enhance the flavor of your food.
