Jalapeno Cheese Grits Casserole
- 4 cups water
- 1/2 teaspoon salt
- 1 cup grits quick cooking
- 1 cup cheddar cheese, very old, sharp grated
- 8 ounces cheese with jalapeno peppers, processed, cubed
- 1/4 cup butter or margarine
- 3 large eggs lightly beaten
- 2 tablespoons jalapeno pepper chopped
- 1 tablespoon worcestershire sauce
- 1 x paprika
- Preheat oven to 350F (180C).
- Grease a 2-quart baking dish.
- Bring water and salt to a boil in a large saucepan.
- Stir in grits.
- Cover, reduce heat to low, and cook 5 minutes, stirring occasionally.
- Remove pan from heat.
- Stir in cheeses and butter until melted.
- Add eggs, jalapeno pepper, and Worcestershire sauce; blend well.
- Pour mixture into prepared dish.
- Sprinkle with paprika as desired.
- Bake 40 to 45 minutes or until set.
- Cool 10 minutes before serving.
