Miso Cheese Eggplant and Ground Meat Bake
- 2 Eggplant (slim Japanese type)
- 1/2 medium Onion
- 1 Green onions or scallions
- 100 to 150 grams Ground meat (beef and pork blend)
- 2 1/2 tbsp Miso
- 2 1/2 tbsp Sugar
- 2 tbsp Sake
- 1 tbsp Mirin
- 1 tsp Soy sauce
- 1 as much (to taste) Melting cheese
- 1 as much (to taste) Grated cheese
- Chop the onion coarsley.
- Thinly slice the green onion.
- Cut the eggplants into quarters lengthwise and slice thinly or into a 1 cm dice.
- Soak in a bowl of water.
- Combine sauce ingredients well.
- Stir-fry the ground meat in a frying pan.
- When the meat changes color, add the onion and green onion and stir-fry.
- When the onion has wilted, add the well drained eggplant and stir-fry.
- When the eggplant has wilted, add the sauce and stir-fry.
- When all the flavors are distributed, it's done.
- You could serve the dish at this point.
- Put the stir-fry in a heatproof dish.
- Top with pizza cheese, and bake in a toaster oven until the cheese has browned slightly.
- Optionally sprinkle with some grated cheese and serve.
