Miso Cheese Eggplant and Ground Meat Bake

  1. Chop the onion coarsley.
  2. Thinly slice the green onion.
  3. Cut the eggplants into quarters lengthwise and slice thinly or into a 1 cm dice.
  4. Soak in a bowl of water.
  5. Combine sauce ingredients well.
  6. Stir-fry the ground meat in a frying pan.
  7. When the meat changes color, add the onion and green onion and stir-fry.
  8. When the onion has wilted, add the well drained eggplant and stir-fry.
  9. When the eggplant has wilted, add the sauce and stir-fry.
  10. When all the flavors are distributed, it's done.
  11. You could serve the dish at this point.
  12. Put the stir-fry in a heatproof dish.
  13. Top with pizza cheese, and bake in a toaster oven until the cheese has browned slightly.
  14. Optionally sprinkle with some grated cheese and serve.
