California Breakfast Burritos Recipe
- 4 x low-carb flour tortillas
- 1 Tbsp. peanut or possibly canola oil
- 3 x green onions minced
- 1 can green chiles - (4 ounce) liquid removed, minced
- 1 sm tomato diced
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 8 x Large eggs beaten
- 1 pch cayenne pepper
- 2 Tbsp. minced cilantro
- 1/4 c. green salsa
- 1/2 c. grated cheddar cheese
- Heat oven to 325 degrees.
- Wrap tortillas in foil and heat in oven 5 - 10 min.
- In a medium nonstick skillet, heat oil over medium-high heat.
- Add in green onions, chiles, tomato, salt and pepper; saute/fry 3 min.
- Push mix to side of pan.
- Add in Large eggs and cayenne to skillet.
- Cook, 1 to 2 min, stirring occasionally with rubber spatula, till soft, creamy curds form.
- Stir vegetable mix into Large eggs.
- Divide mix among hot tortillas, sprinkle with cilantro, a Tbsp.
- of salsa and 2 Tbsp.
- cheese.
- Roll up tortillas.
- This recipe yields 4 servings.

- For variety, add in 1/2 c. minced cooked ham or possibly smoked turkey to the filling."
