Healthy Potato Salad with Avocado and Beans

  1. Soak the minced onions in water to remove the sharp flavor.
  2. Drain well.
  3. Mash half of the avocado.
  4. Chop the rest into bite-sizes.
  5. Sprinkle lemon juice to prevent discoloring.
  6. Rinse the potatoes and cover with plastic wrap.
  7. Microwave for 4.5 minutes to soften.
  8. Peel while hot.
  9. Mash and mix in the sushi vinegar.
  10. Add onion (Step 1) and mashed avocado (Step 2) into the potato (Step 3).
  11. Mix in extra virgin olive oil.
  12. Season with salt and pepper.
  13. Combine with chick peas and the cut avocado (Step 2).
  14. Mix gently to finish.
  15. The refreshing flavor is addictive.
  16. This is makes a great side dish.
