Island Kabobs

  1. Soak skewers in water for 20 minutes before grilling (to prevent burning during grilling).
  2. Combine first ten ingredients in a container with a lid.
  3. Combine well.
  4. Add meat cubes and vegetables.
  5. Gently stir to distribute the marinade over all.
  6. Cover and refrigerate at least 2 hours.
  7. Place meat and vegetables on skewers, brush with marinade and broil over hot coals 15 minutes or until cooked.
  8. Turn skewers and brush with marinade during the cooking process.
  9. Serve over seasoned rice.
