Lentils Esau

  1. Place lentils and water in a large pot.
  2. Bring to a boil and boil for 5 minutes.
  3. Remove from heat and set aside to soak for 1 hour.
  4. Return pot to heat.
  5. Add oil, onion, garlic and fennel.
  6. Simmer gently for 35 minutes, or until lentils are tender.
  7. Season with salt if desired.
