Farmhouse Recipe: Taramasalata

  1. Cut into the membrane of the tarako and scrape out the insides.
  2. Mix with lemon juice.
  3. This eliminates any fishy flavor.
  4. Peel the potatoes and boil from cold water.
  5. Cook until a skewer pierces through easily, and drain well.
  6. Mash the potato with a potato masher.
  7. Add milk and cook while mixing for 1 minute.
  8. Add the A ingredients, cook and mix for another minute, then turn off the heat.
  9. Add the tarako from step 1 and mix.
  10. Taste, and add salt if needed.
  11. I like to spread this on sliced baguettes.
