Roast Pork and Escarole Soup with Pasta

  1. Heat olive oil in heavy medium saucepan over medium-low heat.
  2. Add garlic and stir until beginning to color, about 2 minutes.
  3. Add broth and oregano.
  4. Increase heat to high and bring mixture to boil.
  5. Add pasta and cook 4 minutes.
  6. Add escarole and cook until pasta is tender, about 5 minutes longer.
  7. Add pork and 3 tablespoons Parmesan and simmer mixture 1 minute.
  8. Ladle soup into deep bowls.
  9. Sprinkle with remaining 5 tablespoons Parmesan and serve.
