Roasted Italian Vegetables

  1. Preheat oven to 450* F.
  2. In a large bowl, combine zucchini, mushrooms, and pepper.
  3. Add remaining ingredients and toss to coat.
  4. Arrange vegetables in a single layer in a long baking pan coated with cooking spray.
  5. Bake, uncovered, for 15-20 minutes, or until tender, stirring occasionally.
