Pineapple Ham Loaf
- 1 pound Ground Ham (use A Food Processor Or Ask The Deli If They Can Grind It)
- 1 pound Ground Pork
- 2 whole Eggs
- 3/4 cups Soft Bread Crumbs
- 3/4 cups Milk
- 2 Tablespoons Ketchup
- 8 wheels Pineapple (reserve The Juice)
- 1 cup Brown Sugar
- 1/4 cups Pineapple Juice (use From Canned Pineapple)
- 2 Tablespoons Apple Cider Vinegar (or Any Vinegar You Have On Hand)
- 1 teaspoon Mustard
- Mix together the ground ham, pork, eggs, breadcrumbs, milk and ketchup.
- In a separate bowl mix the brown sugar, pineapple juice, vinegar, and mustard.
- Set aside.
- Divide meat mixture into 9 patties alternate patty, then a wheel of pineapple, patty, then wheel of pineapple and so forth.
- Put them in a loaf/stack in a 9x13 dish or 2 or 3 loaf pans.
- Cover and bake at 325 degrees for 30 minutes.
- Take out and baste the loaf with the glaze mixture.
- Put back in the oven for another 60 minutes.
- Super easy and delicious!!
