Thai Noodle Salad

  1. Drop the noodles into a large pan of boiling salted water.
  2. Take the pan off the heat and leave them to soak for 3 minutes.
  3. Drain the noodles well, tip then into a salad bowl and leave to go cold.
  4. Finely grate the zest from 1 lime and squeeze the juice from both.
  5. Add to the noodles with the rest of the ingredients, then simply toss lightly together and serve.
