Cheesy Tortilla Corn

  1. Heat oil in large skillet on medium-high heat.
  2. Add onions and red peppers; cook and stir 5 min.
  3. or until crisp-tender.
  4. Reduce heat to medium.
  5. Stir in corn and Velveeta.
  6. Cook 5 to 7 min.
  7. or until Velveeta is completely melted and mixture is heated through, stirring occasionally.
  8. Spoon corn mixture into serving bowl; sprinkle with the crushed chips and cilantro.
