Spinach Scramble

  1. Crack open eggs into small bowl, discarding 2 of the 4 yolks.
  2. Add milk, salt, and pepper.
  3. Whisk together.
  4. Spray small amount of canola oil into a medium skillet over medium heat.
  5. Add egg mixture and cook for 1-2 minutes until bottom of egg mixture is cooked.
  6. With a heat-resistant spatula, lift egg mixture from the bottom and begin to scramble as eggs continue to cook.
  7. Add spinach and cheese to egg mixture, cooking an additional 2-3 minutes until cheese melts and spinach wilts.
