Savory Seafood and Pasta
- 4 ounces, weight Whole Wheat Pasta
- 14 whole Medium Precooked Peeled Shrimp
- 2 Tablespoons Crumbled Cheese (I Used Mozzarella But Gorganzola/goat/feta Would Work Too
- 3 cups Chopped Baby Spinach
- 1 whole Tomato
- 2 Tablespoons Chopped Almonds
- 3 Tablespoons Pesto
- 1.
- In a large pot, boil water and cook pasta according to directions on box.
- 2.
- Drain and return to pot.
- 3.
- Add shrimp, cheese, spinach, tomato, nuts and pesto.
- Stir well to wilt spinach slightly and distribute pesto.
- 4.
- Serve and enjoy!
