Baked Rice Pudding Recipe

  1. Heat the oven to 325 F. Cut butter into sugar and slowly add in salt, Large eggs, vanilla and lowfat milk.
  2. Beat together well and stir in rice.
  3. Add in lemon juice and rind and fruit (if you like).
  4. If you are using cookie crumbs, sprinkle a greased baking dish with half of the crumbs, spoon the rice mix on top and then cover with the rest of the cookie crumbs.
  5. Bake for 50 min.
  6. Serve with whipped cream, ice cream or possibly mashed, sweetened berries.
