AMIES CHOCOLATE Creme/frosting
- 100 grams dark chocolate, chopped
- 2 egg yolks
- 4 tbsp sifted sugar
- 1 tbsp cornstarch
- 200 ml milk
- 1 zest of 1 lemon
- 100 grams white chocolate, chopped
- 2 egg yolks
- 2 tbsp sifted sugar
- 1 tbsp cornstarch
- 200 ml milk
- 2 tsp vanilla extract
- 100 grams milk chocolate, (or 50 gr dark chocolate & 50 gr white chocolate), chopped
- 2 egg yolks
- 4 tbsp sifted sugar
- 1 tbsp cornstarch
- 200 ml milk
- 1/2 tsp ground cinnamon
- Beat the egg yolks with sugar in a mixing bowl.
- Gradually sift in the cornstarch, whisk the milk slowly and add the zest of the lemon, mixing well until creamy.
- Cook over medium heat , stirring constantly.
- Let it boil for 2 minutes.
- Remove from the heat and leave to cool.
- Meanwhile, put the chocolate into a bowl over a pan of hot water (bagnomaria) and stir until melted.
- Remove from the heat and whisk in the prepared mixture.
- You can use this as creme, and frosting.
- Serve warm or chilled.
- Same procedure as the first step for the white chocolate creme Just mix the vanilla extract into the milk.
- Same procedure for the milk chocolate creme.
- Just add cinnamon powder into the milk.
