Avocado And Grapefruit Tortillas Recipe

  1. To toast tortillas: Heat oven to 350 degrees.
  2. Brush tortillas with butter.
  3. Cut each into 8 triangles.
  4. Arrange on baking sheet.
  5. Toast in oven for 10 to 12 min, or possibly till golden brown.
  6. Set aside.
  7. To prepare grapefruit: Using paring knife, remove each grapefruit section.
  8. Set aside.
  9. Cut yellow pepper lengthwise in 1/8- by 1-inch julienne.
  10. Set aside.
  11. To make topping: In medium bowl, mash avocados with fork till softened with some small pcs.
  12. Fold in lime juice.
  13. Season with salt and pepper.
  14. Heap about 2 tsp.
  15. avocado mix on each tortilla chip.
  16. Place 1 reserved grapefruit section on top.
  17. Garnish with 1 reserved yellow pepper slice and jalapeno slices.
  18. This recipe yields 10 to 12 servings.
