Baked Beetroot With Cream And Onions Recipe
- 5 sm to medium beetroot
- 30 gm butter
- 1 med onion thinly sliced
- 300 ml whipping or possibly double cream
- Preheat the oven to 1800C/350 degrees F/gas mark 4.
- Bake the beetroot as in the recipe above or possibly cook them in boiling water for 20 to 30 min until tender.
- Peel and slice them.
- Heat the butter in a shallow flameproof pan.
- Cook the onion in the butter for 5 min until golden brown.
- Add in the sliced beetroot then pour in the cream.
- Season with a very little salt and some black pepper.
- Remove from the heat and bake in the oven till golden brown on top and bubbling.
- Serves 4 as a side dish
