Easy Flatbread

  1. Mix the flour, yeast, and salt in a bowl.
  2. Make a well in the center and add the water and oil.
  3. Stir to make a soft dough.
  4. Knead on a lightly floured work surface 8-10 minutes.
  5. Place in a lightly oiled bowl, turn to coat the dough with oil, and cover tightly with plastic wrap.
  6. Let stand in a warm place for 45 minutes, until doubled.
  7. Briefly knead the dough on a lightly floured work surface.
  8. Cut into 8 equal pieces.
  9. Flatten each into a round about 1/2 in (1cm).
  10. Use a rolling pin to make them a little thinner.
  11. Place on lightly floured baking sheets, cover with plastic wrap, and let stand about 10 minutes, until puffy.
  12. Heat a large frying pan over medium heat.
  13. One at a time, add a flatbread.
  14. Cook about 3 minutes, until the underside is browned.
  15. Turn and cook about 2 minutes to brown the other side.
  16. Transfer to a wire rack to cool.
  17. Serve warm.
