Lentil Sweet Potato Burgers
- 1/2 cup rice white, cooked, cooled
- 1/2 cup lentils cooked
- 1 small sweet potatoes, or yams peeled, cooked, minced
- 8 each spinach rinsed, blanched, finely shredded
- 1/2 cup mushrooms fresh, chopped
- 1 teaspoon soy sauce, tamari low sodium
- salt and black pepper to taste
- 1/2 cup bread crumbs dry
- 1 tablespoon cilantro finely chopped
- Combine rice, lentils, sweet potato, spinach and mushrooms in a large bowl.
- Add soy sauce, salt and pepper.
- Add bread crumbs and cilantro and mix well.
- Refrigerate.
- Form mixture into 6 to 8 patties.
- Oil a vegetable grill generously--these patties tend to stick.
- Grill for 3 to 4 minutes on each side, until medium brown.
- Serve burger with greens or whatever you prefer.
