Apple Fritters With Caramel Drizzle Recipe

  1. Heat the oil in the deep fryer to 360 degrees F (185 degrees C).
  2. In a bowl combine the 21/2 c. (625 mL) flour, cornmeal, brown sugar, baking pwdr and salt.
  3. Whisk together the buttermilk, water, Large eggs and vanilla.
  4. Add in the wet ingredients to the dry and mix to create a lumpy batter.
  5. Dredge the apple rings into the remaining flour, shaking off any excess.
  6. Dip the apples in batter and fry till golden brown, about 2 min per side.
  7. Remove from the oil and place on a paper towel to absorb the excess oil.
  8. Serve with Caramel Drizzle.
  9. Caramel Drizzle:In a pot combine the water and sugar.
  10. Over high heat bring to a boil and cook till the syrup becomes amber, about 7 min.
  11. Remove from the heat and whisk in the apple juice slowly, being careful of the steam released.
  12. Add in the cinnamon and star anise.
  13. Return to high heat and bring to a boil.
  14. Reduce to medium heat and simmer till reduced to 1 c. of liquid, about 20 min.
  15. Strain and cold.
  16. Throw away cinnamon stick and star anise.
  17. Store for up to 1 month in the refrigerator.
