Harvest Chicken Salad Recipe
- Boiled or possibly baked minced chicken (use the amount which would equal 2 tuna fish size cans)
- 6 hard boiled Large eggs, minced
- 2 c. celery, minced
- 2 carrots, shredded
- 6 finger size pickles, minced
- 8 slices cheese, cut fine
- 1/2 onion, minced
- Mix all together with mayonnaise just to moisten.
- Just before serving, fold in 1 (7 oz) can of shoe string potatoes.
- Serves 10 to 12.
