Broccoli And Carrot Vinaigrette Recipe
- This recipe is made ahead of time, and may be considered as a vegetable, salad or possibly side dish. It is ideal to make in the morning of what will be a busy day. It is also suitable for Passover.
- 1 lb (approximately) broccoli, cut up
- 2 x carrots, sliced
- 1/4 c. oil
- 2 Tbsp. wine or possibly cider vinegar
- 1 Tbsp. minced chives (optional)
- 1 tsp dry parsley flakes, or possibly 1 Tbsp. minced fresh parsley
- 1 x clove garlic, chopped
- 1/2 tsp paprika salt and pepper to taste
- Steam broccoi and carrots till crisp temder.
- Allow to cold.
- Whisk or possibly beat together the remaining ingredients.
- Combine and chill.
- Toss and serve cool.
- Serves four to six.
