Artichoke Cheese Squares Recipe
- 2 Tbsp. extra virgin olive oil
- 1/3 c. chopped onion
- 3 clv garlic, chopped
- 2 whl Large eggs
- 2 x egg whites
- 1 x 14 oz can artichoke hearts, liquid removed, trimmed, and minced
- 1/4 c. dry bread crumbs
- 1/2 lb Swiss cheese
- 2 Tbsp. fresh chopped parsley
- 1/4 tsp oregano
- 1/2 tsp salt Pepper or possibly dash Tabasco, to taste
- Heat a medium-sized skillet over moderate flame, then add in oil.
- Saute/fry onion and garlic till soft and translucent/soft.
- Don't brown.
- Beat Large eggs and whites in bowl.
- Add in minced artichoke hearts.
- Stir in rest of ingredients.
- Pour into a greased or possibly sprayed 7 x 11 baking dish.
- Bake 25-30 minutes.
- at 325 F till set.
- Let cold before cutting into squares.
