Microwave Chocolate Pie
- 5 Tbsp. cornstarch
- 1 1/3 c. sugar
- 5 Tbsp. cocoa
- 2 1/2 c. cold milk
- 3 eggs, separated
- 1 tsp. vanilla
- 2 Tbsp. margarine
- 1 cooked pie shell
- Stir together cornstarch, sugar and cocoa.
- Add cold milk. Do not stir.
- Put in microwave and cook 3 minutes on High.
- Then stir to mix well.
- Return to the microwave for 5 more minutes on High.
- Remove and stir well to blend.
- Beat about 1/3 of the mixture slowly into the 3 beaten egg yolks, until they look chocolaty and are steaming.
- Return the yolk mixture to the remaining filling and mix well.
- Cook on High 2 minutes.
- Remove and stir.
- Add margarine and vanilla.
- Mix well.
- Pour into the cooked shell.
- Beat egg whites with 2 or 3 tablespoons sugar and brown at 350u0b0 for 10 minutes.
