Ice cream with Caramelized Pineapple

  1. In a large frying pan over medium-high heat, add sugar, rum, cinnamon, and pineapple; stir to combine.
  2. Being to a boil, reduce heat to medium and simmer 15 minutes.
  3. Serve scoop of ice cream topped with caramelized pineapple sauce.
