Mixed Rice with Dried Shrimp for Cherry Blossom Viewing

  1. In a rice cooker, add the rinsed rice and the kombu dashi (Japanese soup stock).
  2. Add about 1 rounded teaspoon of rock salt to taste.
  3. If you taste a hint of salt in the dashi, it's the right amount.
  4. Add a generous amount of cherry shrimp to the rice cooker (I added a handful), then press start.
  5. The amount should almost appear like too much.
  6. When the rice is done cooking, mix it gently, and steam it for a while.
  7. Now you have colorful cherry shrimp rice!
