Mixed Rice with Dried Shrimp for Cherry Blossom Viewing
- 700 grams White rice
- 1 bunch Dried sakura shrimp
- 400 ml Kombu based dashi stock
- 1 dash Rock salt
- In a rice cooker, add the rinsed rice and the kombu dashi (Japanese soup stock).
- Add about 1 rounded teaspoon of rock salt to taste.
- If you taste a hint of salt in the dashi, it's the right amount.
- Add a generous amount of cherry shrimp to the rice cooker (I added a handful), then press start.
- The amount should almost appear like too much.
- When the rice is done cooking, mix it gently, and steam it for a while.
- Now you have colorful cherry shrimp rice!
