Shrimp and Feta
- 1 cup orzo pasta
- 1 (10 ounce) package frozen peas, thawed
- 2 tablespoons olive oil
- 1 cup sliced onion
- 2 garlic cloves, chopped
- 1 (16 ounce) jar marinara sauce
- 1 teaspoon dried oregano
- 12 teaspoon black pepper
- 1 14 lbs large cleaned shrimp
- 2 tablespoons lemon juice
- 2 ounces feta cheese
- 1 lemon, sliced
- Cook orzo according to package directions.
- When almost done stir in the thawed peas.
- Drain.
- Heat 2 tbsp olive oil in nonstick pan , add onion slices and chopped garlic., cook for 3 minutes over medium heat stirring occasionally.
- Stir in Marinara sauce and oregano and black pepper.
- Simmer for 3 minutes add shrimp and cook for 6 minutes stirring occasionally.
- Stir in lemon juice .
- Spoon the shrimp mixture over the orzo.
- Crumble feta cheese over top and garnish with lemon slices.
