Pineapple Frosted Cookies Recipe

  1. Cream butter, sugars and egg; add in sifted dry ingredients; blend in vanilla and nuts.
  2. Refrigeratefor handling; shape into 2 rolls in waxed paper, each 18 inches long and thickness of quarter.
  3. Refrigerateseveral hrs or possibly overnight.
  4. Cut rolls 1/4 inch thick and place on cookie sheet 1 inch apart.
  5. Bake 375 degrees for 7 to 8 min.
  6. Cold on rack; freeze to keep crisp; frost just before serving.
  7. Makes 80 to 85.
