BBQ Chicken Pizza
- 2 teaspoons yeast
- 3 cups bread flour
- 1 teaspoon salt
- 2 tablespoons sugar
- 2 tablespoons olive oil
- 1 cup water, plus
- 2 tablespoons water
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- 2 boneless skinless chicken breasts
- 12 medium onion, sliced thin
- 2 garlic cloves
- 13 cup crushed pineapple
- 2 tablespoons olive oil
- 23 cup cheese, grated
- 12 cup barbecue sauce
- Put the first 9 ingredients in order in a bread machine.
- Put it on the dough cycle and let it do its thing.
- This should take about 90 minutes.
- Slice the chicken breast, set aside.
- Heat up a frying pan with the olive oil and allow the onions to cook down.
- Sweet onions work best.
- Add garlic to onions and cook down.
- Add the chicken and saute until almost cooked through, about 5-8 minutes.
- Add the pineapple and some pineapple juice.
- Take off stove and set aside.
- Drain if needed.
- Split pizza dough into two rounds and press into prepared pan.
- I use Pam and a little corn meal (course) so it doesn't stick.
- I let it rise for about 10 minutes (turn on oven, let it warm, then turn it off and put pans in the oven for a warm rise).
- Spread BBQ sauce onto pizza dough.
- Split chicken mixture among the two pizza doughs.
- Sprinkle with cheese.
- I used a mixture of mozzarella, provolone, cheddar, and asiago.
- Bake for 10-15 minutes at 425.
