Squash Casserole
- 1 can chicken
- vegetable broth
- 1/2 cup finely chopped onion
- 2 cups cubed squash (or yams, potatoes,
- combination)
- 1 cup sour cream (regular
- fat-free)
- Salt and pepper
- In large saucepan, bring broth to boil.
- Add onions and squash.
- Simmer until tender.
- Mash.
- Add sour cream until smooth.
- Add salt and pepper to taste.
