Apple Cider Pork Tenderloin (With A Kiss Of Maple)
- 1 pound Pork Tenderloin
- 1 Tablespoon Dried Thyme
- 3/4 cups Apple Cider, Divided
- 2 Tablespoons Apple Cider Vinegar, Divided
- 1 Tablespoon Maple Syrup
- 2 Tablespoons Extra Virgin Olive Oil
- Kosher Salt And Pepper
- Preheat oven to 375 degrees.
- Season pork tenderloin with salt and pepper.
- Heat olive oil in an oven-safe pan over medium-high heat on the stove.
- Sear tenderloin on all sides until slightly browned.
- Add thyme, 1/2 cup of apple cider and one tablespoon of apple cider vinegar to the pan with the pork.
- Place entire pan in the oven and cook until tenderloin reaches an internal temperature of 137 degrees, about 15 minutes.
- Once cooked, remove from the oven and place tenderloin on a plate.
- Cover tightly in aluminum foil.
- Return the pan with apple cider to the stovetop over medium-high heat.
- Add remaining 1/4 cup cider and tablespoon of apple cider vinegar.
- Simmer until sauce thickens and becomes syrupy, about 7 minutes.
- Within the last minute or so, stir in maple syrup and an extra pinch of salt.
- Cut tenderloin into slices (about 1/2 inch thick).
- Drizzle apple cider syrup over the top and serve.
- Goes great with pumpkin gnocchi!
