Apple Cider Pork Tenderloin (With A Kiss Of Maple)

  1. Preheat oven to 375 degrees.
  2. Season pork tenderloin with salt and pepper.
  3. Heat olive oil in an oven-safe pan over medium-high heat on the stove.
  4. Sear tenderloin on all sides until slightly browned.
  5. Add thyme, 1/2 cup of apple cider and one tablespoon of apple cider vinegar to the pan with the pork.
  6. Place entire pan in the oven and cook until tenderloin reaches an internal temperature of 137 degrees, about 15 minutes.
  7. Once cooked, remove from the oven and place tenderloin on a plate.
  8. Cover tightly in aluminum foil.
  9. Return the pan with apple cider to the stovetop over medium-high heat.
  10. Add remaining 1/4 cup cider and tablespoon of apple cider vinegar.
  11. Simmer until sauce thickens and becomes syrupy, about 7 minutes.
  12. Within the last minute or so, stir in maple syrup and an extra pinch of salt.
  13. Cut tenderloin into slices (about 1/2 inch thick).
  14. Drizzle apple cider syrup over the top and serve.
  15. Goes great with pumpkin gnocchi!
