A Winter Green Soup Recipe

  1. Heat margarine in soup pot.
  2. Add in onions; cook, covered, for 20 min.
  3. Add in zucchini; cook, covered 5 min.
  4. Add in broth and bring to a boil.
  5. Reduce heat.
  6. Cook, covered for 20 min.
  7. Remove from heat.
  8. Stir in spinach and basil.
  9. Cover.
  10. Let rest for 5 min.
  11. Cold.
  12. Puree in a blender.
  13. Return to soup pot.
  14. Season with salt and pepper.
  15. Simmer to heat through.
  16. Before serving stir in lemon juice.
