Orange Cilantro Glazed Salmon

  1. Place orange juice in a small saucepan and bring to a boil, cooking until liquid is reduce to 1/4 cup.
  2. Cool slightly.
  3. In a small bowl, whisk together onion, cilantro, lime juice, seasonings, dressing and mustard.
  4. Season fillets with salt and pepper.
  5. In a large skillet, heat oil and cook fillets for 2 minutes on each side, or until golden brown.
  6. Remove fillets to a baking pan.
  7. Brush generously with the orange mixture and bake at 400 degrees F for 10 minutes or until fish flakes easily with a fork.
  8. Enjoy!
