Easy Baked Chicken And Potato Dinner
- 4 bone-in skinless chicken breast halves
- 4 medium Russet or baking potatoes
- 1 red or green pepper (optional)
- 1 medium onion, cut into wedges
- 2 Tbsp. margarine or butter, melted
- 1/4 c. grated Parmesan cheese
- 1 tsp. garlic powder
- 1 tsp. paprika
- Heat oven to 400u0b0.
- Spray 15 x 10 x 1-inch baking pan with nonstick cooking spray.
- Place 1 chicken breast half in each corner of the pan.
- Cut unpeeled potatoes into 1-inch cubes.
- Place potatoes, onions and pepper into center of pan.
- Pour melted margarine over chicken and vegetables.
- Sprinkle evenly with cheese, garlic powder and paprika.
- Bake for 40 minutes or until chicken is fork-tender and juices run clear, stirring vegetables once halfway through the cooking.
- Makes 4 servings.
- Add carrots, broccoli or other vegetables for variety.
