All in One Meatloaf

  1. Puree raw vegetables in food blender until all large chunks are broken down.
  2. Combine breadcrumbs, pureed vegetables, ground beef, egg, and spices in large bowl.
  3. Preheat oven to 350F.
  4. Add 3/4 of the tomato paste, and all of grated cheddar to bowl and mix well.
  5. Shape mixture into loaf in large casserole dish.
  6. Spread remaining tomato paste over loaf.
  7. Cook uncovered at 350 F for 75 minutes, or until loaf is firm and fully cooked.
  8. For adults: Slice and enjoy with your favourite side dish, potatoes, brown rice or pasta.
  9. Salt and pepper may want to be added.
  10. For infants: Mash or cube, serve with babys favourite vegetable, add potatoes, brown rice or whole wheat pasta for a heartier meal.
