Vegemite Toad in the Hole

  1. CUT a 5cm round hole from the centre of each slice of bread using a biscuit or scone cutter and reserve for another use (e.g.
  2. breadcrumbs).
  3. Spread one side of each slice with butter and VEGEMITE then place buttered side up on a paper lined baking tray.
  4. SPRINKLE 3/4 cup of the cheese over the bread then top each with another slice of bread.
  5. Crack an egg into each hole.
  6. Sprinkle over remaining cheese.
  7. BAKE in a hot oven 200C for 15-20 minutes or until egg is cooked and cheese is golden.
  8. Serve immediately.
  9. HANDY TIP: Make fresh breadcrumbs by processing the discarded bread rounds in a food processor.
  10. Freeze until required.
