Vietnamese Style Cauliflower with Straw Mushrooms
- 1 tablespoon soy sauce
- 2 tablespoons water
- 1/4 teaspoon sugar
- 1 tablespoon olive oil
- 1 cup cauliflower florets, sliced thinly lengthwise
- 1 leek (about 6 ounces), white part only, sliced thinly horizontally
- 1/2 cup straw mushrooms
- 1 cup hot steamed rice
- Combine the soy sauce, 1 tablespoon of water, and sugar in a small bowl.
- Heat the oil in a frying pan over high flame.
- Drop the leeks in the oil and cook, stirring for 30 seconds.
- Add the cauliflower.
- Add remaining tablespoon of water and cover, turn heat to medium and cook for 2 minutes.
- Uncover and add the straw mushrooms and sauce.
- Cook, stirring often, for 2 more minutes.
- Serve over steamed rice.
