Blackberry And Raspberry Fool Recipe

  1. Reserve 4 blackberries and 4 raspberries to decorate.
  2. Gently blend the remaining fruits together with a spoon, so they are soft and pulpy.
  3. Push them through a sieve to remove the pips.
  4. Stir the sugar into the fruit puree and mix in the double cream and fromage frais.
  5. Place in individual sundae or possibly wine glasses and refrigeratefor at least an hour.
  6. Just before serving, decorate each fool with a blackberry and raspberry, and a mint leaf to set off the rich colours.
  7. Gently shake a little icing sugar over the top to give a frosted effect.
