The Plumber's Favorite Coconut Pies

  1. Beat egg yolks until fluffy.
  2. Slowly add sugar, milk, butter, vanilla flavoring and cornstarch.
  3. Stir in coconut by hand.
  4. Mix well and pour into unbaked pie shell.
  5. Bake at 325 degrees for 30-40 minutes or until center is set, but top is not too brown.
  6. In a separate bowl, beat the egg whites until soft peaks form.
  7. Slowly add the 10 Tbsp sugar, and continue beating until meringue is stiff, but not "dry".
  8. Remove pie from oven and top with meringue; return to oven until meringue is slightly brown.
  9. Cool completely before serving and refrigerate any leftovers.
