Brandied Bean Soup

  1. Saute carrot, celery and onion slowly in butter for 5 minutes.
  2. Add consomme and 1/4 cup brandy.
  3. Heat to simmering.
  4. Cover and cook 5 minutes.
  5. Cut up sausages and add to soup along with the chili, tomatoes and remaining 1/4 cup of brandy.
  6. Simmer one hour.
  7. Makes a very generous 2 quarts.
