Creamed Lentil Vegetable Soup Recipe

  1. Add in water to lentils and bring to boil.
  2. Turn off heat and let stand 30-40 min.
  3. Finish cooking till almost tender.
  4. Add in vegetables and seasoning and simmer 20-30 min.
  5. Mash with a potato masher.
  6. Lentils and vegetables will remain somewhat whole.
  7. Add in evaporated lowfat milk and bring to a serving temperature.
  8. Add in further seasonings as desired.
  9. Yield: 6-8 servings.
