Jan's Bacon Wrapped Shrimp With Tomato Jam

  1. Sprinkle sugar over tomatoes, peppers and lemon, let sit overnight.
  2. Drain the liquid into a saucepan and boil to a syrup, about 15 minutes.
  3. Add the reserved veggies and boil for 10 additional minutes, do not stir.
  4. Remove from heat and allow to cool.
  5. Wrap each shrimp with a slice of bacon and secure with a toothpick or shish-ka-bob stick (if using wooden stick, soak in water for 20 minutes before grilling!
  6. ).
  7. Grill or barbecue the sticks until shrimp are pink and bacon is crispy.
  8. Serve with tomato jam.
