Cheesy Corn chowder
- 1 tablespoon oil
- 20g butter
- 2 x 310g cans corn kernels, drained
- 1/2 green capsicum, finely chopped Target 1 pkg For $2.99 thru 02/06
- 1 stick celery, chopped
- 1 clove garlic, crushed
- 1/4 cup flour
- 1 2/3 cups chicken stock
- 1 cup milk
- 2 cups grated KRAFT Tasty Cheese
- 2 tablespoons sweet chilli sauce
- 2 tablespoons chopped coriander
- extra sweet chilli sauce, for drizzling
- HEAT oil and butter in a large saucepan until butter has melted.
- Add corn, capsicum, celery and garlic and cook for 3-4 minutes.
- ADD flour to pan and cook, stirring, for one minute.
- Add stock and milk and cook, stirring occasionally until soup has boiled and thickened.
- Remove from the heat.
- STIR through the cheese, sweet chilli sauce and coriander.
- Ladle the soup into serving bowls drizzle with sweet chilli sauce.
- Serve immediately.
