Cheesy Corn chowder

  1. HEAT oil and butter in a large saucepan until butter has melted.
  2. Add corn, capsicum, celery and garlic and cook for 3-4 minutes.
  3. ADD flour to pan and cook, stirring, for one minute.
  4. Add stock and milk and cook, stirring occasionally until soup has boiled and thickened.
  5. Remove from the heat.
  6. STIR through the cheese, sweet chilli sauce and coriander.
  7. Ladle the soup into serving bowls drizzle with sweet chilli sauce.
  8. Serve immediately.
