Warm Roasted Vegie Salad (21 Day Wonder Diet: Day 7)
- 160 g flat mushrooms, halved
- 250 g kumara, cut into 4cm pieces
- 150 g red capsicums, cut into 4cm pieces
- 2 small tomatoes, quartered
- 2 garlic cloves, chopped coarsely
- 14 cup flat leaf parsley, chopped coarsely
- 50 g baby rocket
- 1 tablespoon balsamic vinegar
- 2 tablespoons low-fat ricotta cheese
- Preheat oven to 220C/200C fan-forced.
- Combine vegetables and garlic in large baking dish.
- Roast, uncovered, about 25 minutes.
- Combine roasted vegetables with parsley, rocket, and vinegar in large bowl.
- Serve salad sprinkled with ricotta cheese.
