Chocolate Nut Loaves
- 2-1/4 cups flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 cup (2 sticks) butter, softened
- 2 cups sugar
- 5 eggs
- 3 oz. BAKER'S Unsweetened Chocolate, melted, cooled slightly
- 2 tsp. vanilla
- 1 cup buttermilk
- 1/2 cup finely chopped PLANTERS Pecans
- 1/2 cup dried cranberries
- Preheat oven to 350F.
- Grease and flour two 9x5-loaf pans.
- Mix flour, baking soda and salt; set aside.
- Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir in chocolate and vanilla.
- Add flour mixture alternately with the buttermilk, beating after each addition until well blended.
- Stir in pecans and cranberries.
- Spread evenly into prepared pans.
- Bake 50 to 55 min.
- or until toothpick inserted in centers comes out clean.
- Cool in pans 10 min.
- ; remove from pans to wire racks.
- Cool completely.. Cut each loaf into 16 slices.
