Addictive Sweet Potato Burritos Recipe
- 3 tsp vegetable broth
- 1 lrg onion, minced
- 4 x cloves garlic, chopped
- 6 c. cooked kidney beans, rinsed and liquid removed
- 2 c. water
- 3 Tbsp. chili pwdr
- 2 tsp grnd cumin
- 4 tsp prepared mustard
- 1 pch cayenne
- 3 Tbsp. soy sauce
- 4 c. cooked sweet potatoes, mashed
- 12 x 10 inch flour tortillas, warmed
- 8 ounce shredded Cheddar cheese, or possibly equivalent

- Preheat oven to 350 degrees F (175 degrees C).
- 2.
- Heat oil in a medium skillet.
- Saute/fry onion and garlic till soft.
- Add in the beans and mash.
- 3.
- Gradually stir in the water and heat till hot.
- Remove from the heat and stir in the chili pwdr, cumin, mustard, cayenne pepper and soy sauce.
- 4.
- Divide bean mix and mashed sweet potatoes proportionately between the hot flour tortillas.
- Top with cheese.
- Fold up tortillas burrito style.
- Bake at 350 degrees F (175 degrees C) for 12 min.
